International School- Faith Academy

I had the chance to visit and tour an international school near our place. Located on a hillside overlooking Manila, Faith Academy is a k-12 international Christian School with over 20 Nationalities representing their student body and Faith Academy also accepts Filipino students.

Our tour around the campus includes seeing their library, one of the coolest I have seen. Then we proceeded to the classrooms  and was able to have a glimpse of their students (in different hair color as expected). We also got the chance to see their facilities such as their pool and their newly built auditorium. One of my most favorite part of the tour (except for the Chili Con Carne we had for lunch) was their arts center. Being an artist, it feels like heaven inside that room! (and makes me want to enroll my kids there right at that moment)

Then we had a sumptuous lunch of chili con carne and a very interesting discussion about third culture kids and raising global citizens by Libby Stephens.

It was my first time to hear about Third Culture Kid. According to Libby, Third Culture Kid or TCK is an individual who, having spent a significant part of the development years in a culture other than the parent’s culture, develops a sense of relationship to all of the cultures, while not having full ownership in any. Elements from each culture are incorporated into the life experience, but the sense of belonging is in relationship to others of similar experience. 

It’s quite hard to understand how it was define but with Libby’s explanation, I think I had a better understanding with what TCK is all about.  It’s like the students at Faith Academy, given the fact that there are more than 20 nationalities in their population, each student is expose to different culture and each learns a new culture different from their own.

When Dream Come To Reality..

I have a dream.. a very simple dream…

to plant tomatoes, sigarilyas, okra and eggplant.. a few of my favorite vegetables..and to harvest them in a nice basket and feed my harvest to my kids..

and now my dream is slowly turning into reality!

That’s the seeds that we planted last March 3 (with the help of my kids!).. That’s sigarilyas seedlings. When it started to sprout I was ecstatic! Sigarilyas is my favorite vegetable and to be able to plant one is happiness for me. The other seedlings are tomatoes, eggplant and pepper.

Our Okra seedlings that we planted 2nd week of February.. I can’t wait for the day that my Okra will bear its fruit..

 The Chinese Kangkong after more than a month.. My mom said we need to cut some to encourage more growth.. so we did today! and we’re having Kangkong for lunch!

I am so happy that I finally had the courage to do this planting project..that I was able to manage my time more and squeeze this one.. it turns out, it’s not as time consuming as I thought it is..

Next project: Make an alphabet and number poster for Chico and Sati and start teaching them.

Please Take Me To Mexico NOW!

If there is a food that I can eat every day, that would be CHILI CON CARNE. A dish I first encountered during my college years. A dish that haunted for years until I finally learned to make one. Well, mines good but not as good as the one I tasted from a recent tour at Faith Academy.. a tour that I am having a hard time blog about.. because every time I tried to, I am haunted by the chili con carne we had for lunch…. which is the best I had so far! argh now I am getting hungry again!

That’s my version of Chili Con Carne..steaming rice.. and cheese on top.. plus an ice cold coke! waaaaaah I’m in heaven!

So yes aside from Piñata, another thing that I love from Mexico is their food (and the festivities too!)

And a few weeks ago, we had another Mexican treat.. after a creative afternoon at Global Art, we had a tasteful snack at B&T Mexican Kitchen (just beside the Global Art HQ @ Sekai Center).. opps no photos of food that time (if it is not a food event I don’t take photos of what I eat *wink). Their chips and dips are soo good but what caught my attention and my kids’ appetite is their Mango Glazed Chicken.

The photo’s not from the event but from a take out.. wanted to try City Delivery but that would cost me 400+ more..so hubby and I drove all the way to San Juan for this.. and the supposed charge for delivery just went to another serving of Mango Glazed Chicken. We all agreed that we can finish one serving in one sitting.

As expected, we try to imitate the dish, but this time we used pork chop. The result was not as good as the B&T Mexican Kitchen’s  Mango glazed chicken but it will do for a while.

Here’s our version, I used Mama Sita’s mango syrup for glazing, turns out too sweet hahaha not that bad for a first timer.
