Eh ang tagal na nangungulit ng cookies ng mga bagets, sakto. Pagbigyan ang hilig. You may ask why we travel that far to go to Landers? On the way sya sa Valenzuela where my mother in law resides. We visit my mother in law every payday for her allowance sabay grocery na sa Landers sometimes.

Coincidentally, I received a message from my Facebook Page (Mommy Blogger Pehpot) from rep of Merisant (manufacturer of Equal®) and they want to send a sample kit of their products particularly Sugar Blend.

Sugar Blend is the newest product from Merisant that can be used to sweeten drinks, dishes and can be used for baking too!

Timing is everything. And Merisant came at the right moment.



Sugar Blend Chocolate Chip Cookies Recipe

 

When using Sugar Blend, you only need half of the sugar required. I was hesitant to try but you know I never back down from a challenge.

Ingredients for Sugar Blend Chocolate Chip Cookies Recipe:

  • 3/4 cup Sugar Blend
  • 1 cup salted butter (I always use salted butter and skip adding salt)
  • 1 tsp vanilla
  • 2 medium sized egg
  • 3 cups flour
  • 1 tsp baking soda
  • 2 cups chocolate chips

You will 2 cups of chocolate chips, 1 1/2 cup is used on the dough while the remaining 1/2 cup is used before baking the cookies.

Refrigerate the dough for at least 24 hours. From expereince, 48 hours will give you chewy cookies.

Sugar Blend Chocolate Chip Cookies Recipe

Sugar Blend worked well with my chocolate chip cookies! My usual recipe calls for 2 1/2 cup of flour and 1 1/2 cup of sugar. Since I am using less amount of sugar, I decided to add 1/2 cup of flour on my recipe. It turned out very well! Actually it turned out really really well that after baking it, I no longer buy my favorite dark chocolate chip cookie from Starbucks, kalasa na eh haha.

I also tried using Sugar Blend on my frosting for my pineapple carrot cupcake (also used the sugar with my cupcake) and it turned out good, but didn’t get the stiffness that I want.

 

I was aiming for a two toned rose frosting pero the frosting is not that stiff. It turned OK after refrigerating the frosting. It’s cream cheese frosting by the way. Thinking of using it again with buttercream frosting, bakas mas matigas na sya pag ganun. Or I will just stick to powdered sugar.

But all in all, Sugar Blend did a good job on keeping my cupcakes and cookies sweet with lesser calories.

#1 Small Oven. If your wife/partner loves to bake or usually mentions cupcakes, take the hint! This is the gift that you should give her because she will be baking your birthday cake soon! This a mini counterpart of bigger oven minus some feature. This is inexpensive and relatively small. It won’t hurt the budget and won’t eat much space on your kitchen countertop. And it produces cakes, cupcakes and even roasted chicken!

#2 Electric Pressure Cooker. If you are the kind of mister who loves asking for Beef Nilaga or Kare-Kare, buy this one and wrap it pronto! Why electric and not stovetop? It’s very convenient, set it and forget it. This is placed on #2 as a subtle hint. Eherm, husband, eherm.

#3 Coffee Maker. Nothing beats waking up with the smell of freshly made coffee. The coffee aroma is considered as one of the best perk me up smell in the world (I made that up but it may actually be true). Coffee maker actually makes the coffee taste better, even the instant ones, the taste and aroma is better when you use a coffee maker to make one.

#4 Microwave. This is a must in every kitchen. Still thinking if it is worth to buy microwave, stop thinking and give your money. Your partner will thank you for giving her a microwave as gift. Trust me, I used to say no to microwave but the husband insisted on buying one. When I finally said yes, I wish I said yes earlier. Life has been easier with microwave!

#5 Induction Cooker. When I created my own list a while ago, this one was not included. I was actually thinking of a juicer or a blender. The group of moms I asked pointed out that an induction cooker is a good alternative when you run out of gas. Good point right? Aside from that, it consumes less electricity as compared to cooking using gas (that’s according to my sister). And the pot that is designed for induction cooking are really cute. So hint! When you plan to buy induction cooker as a gift, include pans and pots.

I read once that small kitchen appliances should not be treated as a gift to your partner because it is a household use. Do not believe that. If it will make your partner happy, then go gift it.

Baked Penne With Italian Meatballs Recipe (Contadina Sauces Recipe)

Still can’t get enough of Contadina sauces! And since the last recipe I did was super easy, I challenged myself to make a more elaborate one. Nasobrahan yata ako sa challenge haha. For Noche Buena, I made Baked Penne with Italian Meatballs in Bechamel Sauce.

This is the most elaborate and super sarap pasta recipe I did so far. Move over spaghetti! And will I do it again? Yes na yes and promise I will make a video out of it. Na stress ako sa first time so I never got the chance to record. Here are the recipes I used to make this dish the best pasta dish ever.

Italian Meatballs Recipe from Contadina Website: 

This is super easy to make pala! I have been wondering how meatballs are made and this recipe is super easy and swak na swak. Only, I replaced fennel with anise seed and used only half. Anise seed kase is stronger and fennel is hard to find 🙂

Baked Ziti Recipe

  • 500 grams Contadina Penne Pasta
  • 1/2 cup cream cheese
  • 1/4 cup grated romano cheese
  • 420 grams Contadina Aglio Arrostito Pasta Sauce
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

*Preheat oven to 350 F

1. Cook Penne according to packaging. (Do not rinse off under water!)

2. In a big bowl, combine cream cheese, romano cheese, pepper and sauce (reserve 1/4)

3. Combine penne and sauce.

4. In a pan, spread the 1/4 cup reserved sauce, add the penne mixture and top with Mozzarella.

5. Cover with foil and bake until mozzarella is melted (12 to 15 minutes).

Kaya sya elaborate because that’s 3 things you need to cook but sabi ko nga, it was worth it.

To serve, arrange pasta + white sauce then top with meatballs and parmesan cheese.
