Enjoy More Guiltless with Mekeni Gluten-Free Chicken Longanisa

I recently attended an online event from Mekeni Food Corporation, entitled “Enjoy More, Guiltless.” The event features Regina Latt, Senior Dietitian at the St. Luke’s Medical Center; and Chef Vince Garcia, President and CEO of Chef Vince Garcia Culinary Group to help moms on how we can serve healthier yet easy-to-prepare foods.

I really enjoyed the cooking session with Chef Vince. He shared a nutritious recipe using Mekeni Gluten-Free Chicken Longanisa as the main ingredient called Mekeni Gluten-Free Chicken Longanisa Casserole. From the looks of it, I think this is something that my kids will like.

Before the event, I was also able to share a recipe using Mekeni Gluten-Free Chicken Longanisa as the main ingredient. I prepared Mekeni Gluten-Free Chicken Longanisa Creamy Pasta. It was actually a left over from our breakfast and made its way to the snack table.

It is so simple that even your kids can prepare it. The ingredients are cooked and sliced Mekeni Gluten-Free Chicken Longanisa, crushed garlic, thinly sliced onion, pasta cooked according to packaging, all purpose cream, salt and pepper.

How to cook Mekeni Gluten-Free Chicken Longanisa Creamy Pasta:

  1. Saute garlic and onion.
  2. Add Mekeni Gluten-Free Chicken Longanisa and stir for a few minutes.
  3. Add a pack All purpose cream.
  4. When the sauce starts to simmer, season with salt and pepper then toss the pasta.

I usually serve mine with crushed pepper and parmesan cheese.

This is actually my first time to try Mekeni Gluten-Free Chicken Longanisa and though at first I thought it would taste bland, surprisingly, it is very tasteful. I learned from the online event that Gluten is not new.

“It is always present in the grains that we know like rye, barley, and wheat. It’s in products like bread, sauces, condiments, salad dressings, pasta, pizza, processed foods, beer, and in meat products that are processed with extenders and added flavorings or colorings.” Senior Dietitian at the St. Luke’s Medical Center, Regina Latt explained. She noted that following a gluten-free diet may help in losing weight, reducing total caloric and sugar intake, managing diabetes, and reducing bloatedness.  

“It is important to note, however, that for any diet concerns or any diet changes that you would like to do, it is important to consult with a doctor or a licensed nutrition professional to help you with that, especially if you have existing medical conditions,” she said.

And if you’re planning to begin collecting plants, you need to do some research about plants that you want to buy, especially if you’re planning to buy some indoor plants. And you might as well pay attention to the plants that are poisonous and learn not to hurt yourself while re-potting them or while you are cutting your plants.

Caladium Plant
Caladium plants have heart-shaped leaves that have light pink or fuchsia pink splatters. It may be pretty, but it is toxic to our cute lovely pets when ingested. It may cause swelling. That is why this is considered as part of Poisonous Indoor Plants Philippines

Aloe Vera

Jade plant or succulents are very cute, colorful, and it has plenty of varieties to choose from. Although they are mildly poisonous to humans, they can be very dangerous to our house pets.

Pothos Plant/Devil’s Ivy
This plant causes skin irritation. It is no known to be dangerous, but there is nothing wrong with being cautious. Pothos causes inflammation to the lips, tongue, and vomiting when swallowed. Put this away from the kids and your furry friends.

Snake Plant
Snake plants can easily adapt to any environment and very hard to kill. It will survive even if there isn’t much natural light source. It will thrive even if you neglect watering it. It’s perfect for people who always forget to tend to their plants. This plant is said to be perilous because it causes nausea, diarrhea, and vomiting when swallowed.

Selloum Plant
Selloum plant has shiny, large, dark green leaf leaves will make your garden or indoors seem like you are in the tropics. But this plant is said to be very lethal because it causes nausea, vomiting, diarrhea, inflammation and, shortness of breath.

Peace Lily Plant
Peace Lily are those flowers that have big white petals with a spadix at its center. This plant is not that lethal, but it can be dangerous to our beloved pets. The pollen grains from the flower may cause oral irritation if our pets lick it. Peace lily also contains calcium oxalate crystals.

Taking care of plants is good for the environment because it supplies us with more oxygen. But having these beautiful yet lethal indoor plants when you have infants and pets is quite risky. If you still want these plants in your household, then put it somewhere they can’t reach it. And just in case some of their saps get on your hand or skin, wash it quickly with liquid dishwashing soap. Dishwashing liquid soaps are more effective in washing away plant saps. There is nothing wrong with taking care of these poisonous indoor plants. You just have to be careful with handling them. Happy planting plantitas and plantitos!

Natural and Healthy? Check The Label Mommies!

The new normal. How many of you have already adjusted to this thing we called the new normal? What are the things you have changed so far? I know there are many changes that is happening around us, some things that we never imagined will happen, but is already happening. As parents, as moms, the responsibility to adjust for the family is relied heavily on us. And it can be really overwhelming and can be stressful, but we will be dealing with it none the less. Tayo pa ba? Ang mga nanay walang sinusukuan yan.

Talking about dealing with it, I guess one of our biggest concerns is the health of our family. I am telling you, your concern is valid and you are not alone. Each every mom have been looking for ways to make their family healthier and with better immunity. It is in our nature to find ways, to ask around what else can we do to make our family health. Kumbaga mas naging health conscious na tayo ngayon.

Kayo ba, what are the changes that you’re doing to ensure that your family is healthy? Alam nyo kame, we have been exercising more, doing more physical activities than ever. We’re alaso trying to take advantage of the health benefits of morning sun exposure. The kids are also more involve with household chores. That’s hitting two birds in one stone! Mas nagiging responsable na sila, may physical activity pa.

Of course we also change a few in our diet. More fruits and veggies please! We really have to wise with our spending di ba? We have to spend our hard earned money wisely and in a more practical way. Lagi ko nga sinasabi sa mga bata, kesa ibili mo ng pagkain that may or will cause you more harm that good, just buy something natural and nutritious.

And that is how we are coping so far! Our buying attitude now lean towards providing the best, and the most nutritious for our family. We understand the importance of fruit in our diet and we buy these to keep our kids healthy. And because we are more conscious with what we buy, we highly rely on the nutritional facts and ingredients list that are indicated on the back label. Pero alam nyo ba some food manufacturers use misleading tricks to convince people to buy highly processed and unhealthy products. Ano daw? Kahit ako nagulat din ng nalaman ko. When it comes to our fruit juices, I also check the ingredients to make sure that it has the freshest ingredients, always check the back label!

I learned that lesson sometime ago. Like most of you, I really believe that aside from water, the next best drink is fruit juices. So for my school kids, I always buy fruit juices in tetra pack in boxes! I have this thinking that what I a giving them as baon for school was healthy. Mali pala when I started reading the label. I’m just actually giving them sugar in a tetrapack. So imagine my surprise eh may 5 box pa ng fruit juice sa pantry.

This is why I am sharing this to you, para hindi na kayo magkamali. Here’s my guiding principle when checking the ingredients of products that claim to be healthy and natural:

  1. Check the first 5 ingredients. Usually the first 5 ingredients make up the largest part of the food component.
  2. If an ingredients list is longer than two to three lines suggests that the product is highly processed. Pag mahaba, magduda ka na.
  3. If an ingredient is hard to pronounce, it might not be good for you

Alam mo mabilis lang naman mag check ng label and investigate. If the product claims to be natural and healthy, double check the back label before buying it. Are you ready to check the back label?
